Description: As the title suggests, the engraving is a portrait of a Virginia cook, whom Crayon described as "not merely a black woman, . . . but one bearing a patent stamp by the broad seal of Nature; the type of a class whose skill is not of books or training, but a gift both rich and rare -- who flourishes her spit as Amphitrite does her trident (or her husband's, which is all the same), whose ladle is as a royal sceptre in her hands, who has grown sleek and fat on the steam of her own genius, whose children have the first dip in all gravies, the exclusive right to all livers and gizzards, not to mention breasts of fried chickens -- who brazens her mistress, boxes her scullions, and scalds the dogs . . . ." Title: Gantz, Jones & Co.'s sea foam
Description: Series of trade cards containing captioned scenes in silhouette and profile, including racist imagery, that promote and portray the use of the New York firm's baking powder in cooking. "The First Lesson in Cooking" shows a matron-like figure (in the right) holding out a can of "Sea Foam" baking powder to three young woman standing in a row (in the left). The older woman is attired in a long-sleeved dress with a tiered skirt and bustle, spectacles, and an adornment in her hair. The young women wear long-sleeved dresses with tiered skirts and bustles and hair ornaments that resemble pointed caps. The woman closest to the matron also holds a parasol in her right hand and the woman in the far left also wears a long braid that runs down her back. The women look at and lean toward the baking powder can with interest. "Mine is the Best" shows a woman home cook and a professional male cook facing off. In the right, the man, holds his right hand in a fist, and points behind himself to a table on which a can of "Sea Foam" and a bowl rest. "Missus, We'll Nebber Use Any Odder!" shows an African American man, portrayed with exaggerated features, and holding an extra-large "Sea Foam" can, walking toward a stove at which a woman is kneeled and placing something in the oven. A pot and tea kettle rest atop of the stove across from the stove pipe. The woman wears her hair down and is attired in a long-sleeved dress with ruffles at the bodice and a skirt with bustle., Gantz, Jones, & Co. was originally established as a chemical business in 1849 by Thomas Andrews. George W. Gantz joined the firm in 1853. About 1869 Andrews retired and in 1877 Walter H. Gantz and F. B. Jones joined the business as partners. In 1884 the firm's New York warehouse was heavily damaged by fire and in 1890 the partnership dissolved. Following the 1856 patent of the first modern baking powder, several later 19th-century chemical firms, including Gantz, Jones & Co. attempted to capitalize on the new, very profitable baking powder industry. Baking powder significantly lessened leaving times for baking and cooking, and multiple companies began to market either cream of tartar or alum based powders that required no combining at home. Description: Series of illustrated trade cards for Strawbridge & Clothier's dry goods store at Eighth and Market Streets in Philadelphia. Illustrations depict men riding in a horse-drawn carriage past a sign reading "The largest retail stock of dry goods. Strawbridge & Clothier, Eighth & Market Sts., Philada."; an old man seated with his cane watching a woman harvest wheat; a chef wearing an apron and chef's hat pulling on the neck of a duck; and a porter rushing off of a train to help a man carrying Strawbridge & Clothier packages. In 1861, Justus Strawbridge opened a dry goods store at the northwest corner of Market and Eighth streets. Description: Racist trade card promoting King Cereal Manufacturing Company and depicting a caricature of an African American woman domestic serving pancakes to a white couple while an African American man cook smiles in the kitchen. Shows the African American woman domestic, attired in a red dress, a white apron, and a white bonnet, holding her apron up in her hands while looking at the viewer and winking her eye. In the right, a brown-haired, white man with a mustache attired in a black suit, a white collared shirt, and black shoes and a white woman with brown hair in a bun and attired in a blue dress, sit in wooden chairs at a table covered with a white tablecloth. The white woman looks at the viewer as she wipes her mouth with a white napkin. On the table is a plate of pancakes, a coffee pot, glasses, and a condiment tray with various bottles. Through a doorway in the left background, the African American man cook, attired in a white chef’s hat and jacket, a white apron, pants, and black shoes, smiles as he stands behind a table with a box of King’s Quick Rising Buckwheat. In the right on the wall are two framed pictures and a large window with white curtains. Image also includes a red rug and a wooden chair with a green cushion. Edward King (d. 1907) founded King Cereal Manufacturing Company in 1861 in Chicago. He sold his interest in the firm to H. Horner & Co., wholesale grocers in 1903.
